I believe the state is doing all mail-in again (at least my county is), so those votes will be counted first, then in-person votes as voting centers report them. But there is a lag time built into the process: mail ballots normally have 3 days to get to the county registrar, but for the 2020 election they allowed 17 days. Plus, damaged and provisional ballots have to be processed individually. In theory, counties can sit on their results until ~30 days after the election, but unless an election is really close we should know by the 15th or 16th
