SIM cards for traveling

There is no cell phone group so I apologize here but they are little computers...lol.

Anyway...We are planning a trip overseas to New Zealand.. We will be there 2 months maybe longer.

How do SIM cards work?
Will buying one there allow us to convert our iPhones to "local" phones?

If not then your options are:
- upgrade to an international plan via your current provider.
- get a burner cell that works in your destination.
