And could not find out how many carbs per day was considered low carb.

If you found it, let me know.

But frequently they will use something like 100+ carbs a day as low carb. But that's pretty high and more of a maintenance carb level for people who are trying to maintain weight loss.

I, for example, eat about 30 carbs a day and I know people who eat less. So these low carb diets in diet studies typically misrepresent what low carb really is. BTW, my protein levels are average. I eat a lot of low carb vegetables...radishes....greens...cabbage... broccoli. And No Sugar or starchy flours at all.

2. I've been gradually eating lower and lower carb diet

Right now I’m probably around 75-100/day, more or less, and I’ve noticed I feel a lot better. Heavy bread, French fries, pancakes/waffles, all make me feel gross now.

5. Low carb really helped

With my arthritis pain. I have no pain if I keep.my carbs low. But when I do normal carbs, it hurts badly. Sugar is the worst on my wrist and hand pain.

considers 20-57 grams per day as "low carb". I eat whole grains: a lot of brown rice, whole grain wheat, steel-cut oats etc. I don't purposely avoid any whole grains at all. Lots of veggies and fruit, legumes and nuts. I eat no animal products at all.

High blood pressure, type 2 diabetes, and reduces risk of heart disease and various cancers like breast cancer. But nice to see this study specifically on Covid. I had also never seen a study that mentions pneumonia before.

So, low carb diets for people with a tendency for type 2 diabetes will actually help them. So I really would like to know the number of carbs they used as their standard for a low carb diet.

When I do low carb the pain in my joints from arthritis almost totally disappears.

vegan people are generally more health conscious to begin with?

I would imagine if you looked at vegans vs. the average American non-vegan, you would find vegans were more likely to mask and distance and more likely to vaccinate early and often (excepting the vegans who are anti-vax, but I don't think that is a large percentage.)
