(14,374 posts)Just cutting them into steaks and frying them up in little olive oil is simple, but wonderful!
Curried cauliflower is magnificent too. Mix with low fat coconut milk, curry powder, lime juice and chicken or shrimp cooked in olive oil with garlic. It is very tasty and satisfying.

Makes a great side dish or a bed for vegetables/meat, and although the texture and taste doesn't
mimic rice, the appearance does, and it's enough to trick me into fullness.

Also, Green Giant just came out with a variety of "riced" vegetables.
I've seen them advertised, but haven't found them in the stores that I frequent yet.
