Keto & Gluten Free Fathead Pizza Dough

Preheat oven to 350F.


1.5 Cups of shredded mozzarella cheese
2 ounces of cream cheese
2 Tablespoons of grated Parmesan cheese
1 large egg at room temperature
3/4 cup of almond flour



Optional: I add an extra 1/2 Cup of mozzarella cheese to the already measures 1.5 Cups and I'll share a photo of what I sometimes do when I add the extra 1/2 cups. I also add 1 teaspoon of garlic powder and 1/2 teaspoon of paprika to the "dough mixture" before microwaving at intervals. I also increase my cream cheese by double from the demonstrated video.


Place the shredded mozzarella cheese, cream cheese, parmesan cheese and optional seasoning in a microwave safe bowl and microwave at small intervals. I usually do 30 seconds and stir at every interval.


Once it's melted and looks like pizza dough, add the egg and almond flour. I usually do add a little more almond flour to make the dough less sticky after mixing and kneading it.

I generally place parchment paper inside a round cake pan and I'll the majority to my dough and shape it. I set aside a bit but I eyeball it so I can't say how much exactly that I set aside.

I'll take the parchment along with the dough and remove it from the cake pan and set on a cookie sheet and roll it out so it's not so thick. I pokes holes into the pizza dough.


I'll take the dough that I set aside and I'll shape that into a rectangle shape using some parchment paper and roll that out.
I generally set aside enough dough to make 4 "bread sticks" and I'll poke holes in that as well with a fork, precut them, place small pats of butter and sprinkle garlic powder and parmesan cheese on the bread sticks.


Bake the dough for 10 to 15 minutes or until lightly brown.


This is where I take both items out of the oven when baked and I turn off the oven and turn on the broiler. I place marinara (I would guess about 4 to 6 Tablespoons) shredded mozzarella cheese and favorite pizza toppings. I place in the broiler for about 3 minutes or until the cheese is nicely melted.
