Salad in a jar.....





I was naughty over the holidays and need to find my old resolve. Finding new (to me) ideas helps me get back some motivation. Plus I like to prepare things in bulk for the week (because I can get lazy, which is another downfall of mine) so this might be a good thing! If this method can keep the lettuce crisp I'm in! Now I just need to go get some wide mouth canning jars and give it a try.

I can't watch/listen to the video right now, but would really like to know what it says. Do you add water or have to make sure the lettuce is really dry? Tight or loose lid? Actual lid or wet paper towel and ring?

2. She uses a salad spinner to make sure the lettuce is dry after washing....

She chops it into the bite size pieces that she likes. She then fills the wide mouth jar even stuffing it down a bit to fit more lettuce. She places the flat cap over the full jar and uses her vacuum sealer w/jar attachment thingy and seals down the flat top. Then she screws on the rim cap and stores the full jars in the fridge. Hope that helps.

I don't have that attachment. Suppose the same principle works for the vacuum bags though. Although not as reusable.

5. If your vacuum has the attachment port hole maybe you could buy the jar attachment...

3. Also somewhere today I read that you can reuse the flat lids if the rubber remains good...

and the lid isn't dented. So that should save a little money, reusable is good.

I've made a salad in a jar to take to work with me--not vacuum sealed and a complete salad, not a jar of lettuce.

Put the dressing in the bottom of the jar. Add your proteins like tuna or chicken. Then add firm veggies that benefit from marinating: carrots, radishes, green onions, etc. Top off with lettuce. Keep upright in transport and at lunchtime just dump it out onto a plate for an instant, complete salad.

easy for work!

The thing I liked about the vacuum sealed lettuce idea was that I could make up a weeks worth of lettuce ahead of time. I'm retired so adding the other stuff I like wouldn't take much effort for me. Like I said, I can get lazy and like to grab for something easy which can really mess with my diet. So preparing healthy stuff all at once for the week helps keep me in line. Sometimes I'm my own worst enemy, lol.

Cutting up produce loses vitamin content. The real solution is to overcome such laziness and learn to love prepping LIVE FOODS!
