Stuffed pork chops using coffee rub. I've never tried this before, but in reading up on it, I find that the cowboys used coffee grinds as a rub before they grilled steaks because they thought it added punch to the taste.
The label on the rub says it's sea salt, coffee, sugar, garlic powder, paprika, chile pepper, coriander, cocoa, garlic, basil, rosemary, black pepper and nutmeg.
I know one of our fellow posters has tried it as I recall reading that post.
Stuffing is chopped apple, bacon, onion, celery, bread crumbs.
Arugula leaves to munch on as a side. Not even a real salad: just leaves!
Cornbread mini-loaves with olive oil butter and the option of hot pepper jelly.
Dessert: blueberries with toasted almonds, drizzle of agave. Earl Grey tea. Shortbread cookie.

Hamburger vegetable soup, accompanied by biscuits, made Monday night. It was good then and will probably be even better tonight.
