What's for Dinner, Thurs., Dec. 22, 2022

Salad and lasagna.

I tried a new salad dressing; it's called Apolonia Pink. Surprisingly good! I liked its earthy taste (no surprise that because it is pink it has beets in it). Salad has romaine, arugula, cherry tomatoes, both gold and red, scallion, red and green pepper, red and Daikon radish, Kalamata olives, and miniature Persian cucumbers.

With the salad I had cranberry Rainforest crackers with mascarpone.

Bought the lasagna from a grocery deli. Supposedly made there but I doubt it.
Very average; won't buy it again.

Dessert: decaf and blackberries with toasted almonds and vanilla pudding.

and we both had the collywobbles yesterday. I'm making congee in the instant pot with chicken thighs and rice per a Vietnamese-American recipe. Chicken soup cures everything!

3. Road food

Turkey, Swiss, lettuce, tomato, onions and mustard on soft rye bread. A bag of veggie chips, a couple of Bosc pears and water.

The holidays, my MIL’s 90th birthday and some business have us heading north to NYC for a few weeks. Then we’ll return to our boat to finish our trip to the Bahamas where we’ll enjoy the seafood!

I use a smoked turkey leg instead of ham to season it.
My daughter does this when she fixes beans for her in laws who do not eat pork..

(well, there's some for a breakfast wrap tomorrow)

I cut it up put it in a gravy w/ mushrooms, onions and garlic--served that over potatoes. There was balsamic tomatoes and sauteed asparagus on the side.

peach pie for dessert (no, I didn't make it)

Leftover chili and cornbread. It's only 2F (windchill -13) here and I'm staying under the damned blankets.
