What's for Dinner, Sat., Feb. 18. 2023

Changed my cannellini-meatball-minestrone today with a little coaching from the RG. I liked this tip; worked out well.

He told me to drain some of the liquid from the soup and add beef broth to it after I sauteed a little more onion in better in a pan. Into this new broth base, I added more herbs (thyme, mostly) and then some Better than Bouillon beef (1 tsp) and a tsp of tomato paste. Then I tasted it: voila, all new, more flavorful taste.

Put my vegetables into the broth and brought it to a boil. Added the meatballs and escarole, plus a generous sprinkling of Parmesan for the top.

Salad made with chopped Romaine. Cherry tomatoes, green pepper, red onion, celery, and cucumber. I added more Gorgonzola to the salad dressing, topped it with chopped bacon and Chinese noodles.

Dessert: tapioca pudding with green grapes. Decaf coffee, French roast.

Angus beef patty. Stovetop boiled ppotatoes with garlic salt and butter. Libby's corn. Izzio sourdough bread -toasted. Orange Gatorade. One York peppermint patty for dessert.

8. seafood chowder

with stock made from the shells of the crab we had earlier this week, potatoes, and some of Trader Joe's frozen mixed seafood. Probably a green salad. I'm debating whether to make a quick break.
