What's for Dinner, Mon., Feb. 20, 2023

Bruschetta with Escarole and Gorgonzola.

Stuffed green peppers. Stuffing has chopped vegetables and ground chicken. Topping will be mozzarella and parmesan cheese.

Peach Paradise kombucha.

Baked apple galette for dessert with toasted coconut yogurt topping. Earl Grey tea.

Slow baked chicken leg quarters - spice dry rub well before cooking and then a thin coat of tomato based BBQ sauce.

I'll serve the meatballs on brown rice with roasted broccoli. Dessert will be cashew coconut cookies.

Homemade French onion soup with Gruyère melted on top.

Croque Monsieur sandwiches with Dijon mustard and cornichons.

Sliced pears soaked in brandy for dessert.

Gruyere (it's a LOVELY town, drove through it during our trip around France,) and a wonderful cheese, and Croque Monsieur! (Best ever, of course, was in MontMartre!)

All's well here, pretty good weather, 53 and 'partly' sunny, AND later in the week heading for WEIRD, hi 76! Thursday, snow showers Saturday!!! I suspect some wind somewhere in there.

Nope, change of plans! Saw I had some hamburger that needed to be used up and made spaghetti with side salads instead.
