My list is getting very long indeed

Until I’m back on my feet, I’ve been limited to cooking from a wheelchair. It’s been pretty basic, although I have managed simple things like eggs and grilled cheese. Meanwhile, I’ve been watching a lot of cooking on YouTube and making lists of things I’m going to cook when I can.

My list so far:

Sauerkraut balls
Cucumber salad
Pot roast with potatoes and carrots
Red cabbage
Cheese and spring onion biscuits
Skillet biscuits
Jollof rice
Fried chicken
Gravlax
Shrimp Étouffée
Swedish meatballs
Spätzle with bacon and cabbage
Sole Meunière
Gateau basque
Lentil flatbread
Sauerbraten
Chicken schnitzel
Gorditas
Sesame noodles
Bao
Chinese bbq ribs
Scallion pancakes

I don't know why, but I just had to prove I could do just about anything from my wheelchair. I didn't do too bad, and husband was very supportive.

when it was stuff I could reach, but stood on one leg leaning against the counter to take some of the stress off of it, and sit down for a few minutes when I needed to.

Things just took a little longer. Which turned out to be good practice since they do now, too.

…and my kitchen smaller, maybe I could manage better. I’ve been eating more frozen dinners than I care to admit. Between that and the lack of exercise, my blood sugar control has gone to hell. I can start weight bearing this week, though, so hopefully things will improve soon.

I just added Pork Saltimbocca to my list.

Understood. I was definitely younger and couldn't do it again. Best to take the extra time to heal at this point.

I bake mine, and I don't bread them. Still a real treat

Also Jamie Olivers' jollof rice, well there were some issues with it in 2014.

And the cucumber salad I had in mind was the sweet and sour vinegary kind, which I think would go well with the gravlax.
