What's for Dinner, Sat., March 4, 2023

Bought some Rana tortellini (big bag--spinach & cheese, both green and white) and plan on putting it in my stock from the lamb shank from last night. I'll put in vegetables like shiitake, a little potato, carrot, onion, garlic, etc. along with sage and thyme that I cut from this morning's visit to the garden. Chopped parsley on top. The broth turned out to be quite tasty, so I really want to make use of it.

One thing is for sure: I'll cook the tortellini to order for each serving because if there are leftovers, I don't want them in the broth. It changes the whole dish. Will sprinkle parsley over the top.

Found a recipe in Mollie Katzen's cookbook for a quick bread, so if I have the energy I might make it: savory nut bread with olives. The nuts are almonds, pecans, and walnuts.

Decaf and an oatmeal raisin cookie for dessert.

2. Homemade pasta with Alfredo sauce and roasted carrots

I'm making the Alfredo sauce with cauliflower. New recipe that I thought I'd try. Maybe a little healthier? We'll see. Here's the recipe in case you are interested. The comment is by the author of the recipe, which sounds like a good way to proceed.

Alfredo Sauce

Prep Time: 10 mins Cook Time: 10 mins. Serves 4

Ingredients
12 ounces cauliflower florets, (1 small cauliflower)
½ cup grated Parmesan cheese, more for serving
¼ cup extra-virgin olive oil
2 garlic cloves
½ teaspoon Dijon mustard
3 tablespoons unsalted butter
2 tablespoons fresh lemon juice
1 teaspoon sea salt
Freshly ground black pepper
1 to 1½ cups reserved pasta cooking water

Instructions
Bring a large pot of salted water to a boil. Add the cauliflower and boil until the cauliflower is fork tender, 8 to 10 minutes. Drain and place the cauliflower in a blender. Add the Parmesan cheese, olive oil, garlic, mustard, butter, lemon juice, salt, and several grinds of pepper.

Add 1 cup of the pasta water to the blender and blend the sauce until creamy.

As you toss your alfredo sauce with pasta, you may want to add the additional 1/2 cup pasta cooking water to loosen the sauce.

I had extra time so I blended the cauliflower with the olive oil, lemon juice and Dijon and then added the butter, garlic and salt to a pan and sautéed it until the garlic was fragrant. Then I added the cauliflower mix, cheese, pasta water and added some cooked chicken and broccoli. It was so delicious- I will absolutely make again and freeze so we have it available.

I saved it. Several times this week I wanted to do a dish with Alfredo sauce but opted for something else because of the unhealthy aspects of that sauce. Can't wait to try this!

6. Grilled steaks

We made a short trip to Jensen Beach today and the mooring is lovely.

To start, a salad of Romaine, chopped red onion, cherry tomato halves and sliced black olives topped with Caesar dressing and croutons.

Grilled sirloin filets marinated in olive oil, garlic, salt & pepper and a splash of burgundy. I’m also grilling potato wedges.

Triple cream cheese and red wine for dessert.

Too much fat and cholesterol in this dinner. Oh, well.

variation of Italian tonight! I'm doing lasagna. And, if I can handle it, I might try to make some sort of bread with it, since hubby didn't think of picking any up at the store tonight.

Rounding it off will be a green salad with the usual veggies.

Cherry turnovers for dessert later on tonight while streaming something good on Netflix (I hope).
