What's for Dinner, Tues., Mar. 7, 2023

Meatloaf made with ground pork, beef, and veal. Tomato glaze.

Butternut squash, roasted in the oven.

Iceburg wedge with cherry tomatoes and gorgonzola. Caesar dressing.

Dessert: Earl Grey tea, maybe a chocolate chip/salted caramel cookie.

We’ve run out of ice so we have to finish the fresh food.

Grilled sirloins with fried onions. Grilled potatoes. Romaine salad with red onion and tomato. Brandied apples.

We’re anchored off Palm Beach and it’s a lovely evening.

Andouille sausage, chicken breast, and shrimp with brown rice, tomatoes with jalapeno, celery, onion, bell pepper and garlic. Some Cajun spice mix too.

I'm beginning to think my mom was onto something. She loved making and eating soup. I have been making a pot almost every week all winter.

I love soup in the colder months !

Great way to have more veggies, and the varieties are endless.

Fun to combine with artisan breads or sandwiches. Croissants, toast.

Topping faves are wonton strips, grated parm or cheddar.

It’s easy to make, too. I like to add the Better than Bouillon concentrates to enhance the taste. I have the full range of flavors in my refrigerator.

And best of all, flavors combine and make it even better the second day.

Still watching the carbs. I made potato soup recently, for a treat, and topped it with french-fried onions. That was a happy meal Your meals always sound like feasts. I enjoy reading this forum when I have time. Happy Wed!

I was busy all day doing shopping and work stuff. Hardly had any time to stop at du and check anything.

When I was shopping, I reached for a carton of eggs and when I did, I said irisblue is going to be having egg salad.

And hah, here it is 1:10 in the morning and I see this.

Two benefits:

1. Delicious eating for a good while. Slow cooking for 4-1/2 hours. Huge meatballs, babyback ribs, sausage.

2. I cleaned out the pantry and the freezer: San Marzano tomatoes, sausage, ground pork, ground buffalo.

I'm exhausted but very happy.
