What's for Dinner, Fri., Mar. 17, 2023

Shaved roast beef on naan bread. Muenster cheese, caramelized onion, and red peppers on top.

Parmesan-roasted garlic couscous.

Tossed green salad with red leaf lettuce, spinach, avocado, bacon, thinly sliced red onion, garlic- parmesan croutons.

Ginger-blood orange kombucha.

Dessert: toasted coconut Greek yogurt with banana and pecan-almond-walnuts in honey topping.

in the crock pot with little golden potatoes, cabbage, carrots and a little onion.

We were aiming for 5 pm for dinner, but it's going to be later when the veggies are done.

throw a little olive oil and rosemary, whatever, on them, but then I remembered husband and I had been talking last week or so about tacos and we'd both forgotten about it after that.

We were talking about how my mom used to make them. She'd pat the ground beef on half of the corn tortilla with salt and shallow fry them in oil in the skillet until the meat was cooked through, folding them over half way through. So, I guess that's how I'm gonna make them. Have ground chuck and corn tortillas in the freezer (since you can't buy them in a reasonable amount for two people.)

Just one sheet of store bought puff pastry rolled out to 12".
Stuffing down the middle
Cut slits in pastry and wrap.
Egg wash.

But it *is* pretty, isn't it?

We got some frozen blueberries from the food pantry last Saturday, so I made a pie today. I've never worked w/ frozen blueberries when baking a pie before. I hope it will be okay. (I even carved a little shamrock in the top crust for the vent. I'm not even Irish.)
