What's for Dinner, Tues., April 25, 2023

I'm starting this early because we are having some friends over for an appetizer buffet and wine tasting late this afternoon.

I might add to this post from time to time because the RG is applying his wildly creative abilities to trying out new ideas for the buffet.

For example, he just gave me a mortadella roll-up filled with truffle sauce.

I am making olive foccacia now.

plans are for pork brats on ww bread, baked beans and the cole slaw I made last night to have with the shrimp and onion rings.

It's always nice to try new appetizers. Wine and appetizers, a winning combination.

My SO is making his "famous" savory crescent chicken squares. Not the healthiest recipe, but hey, if someone wants to cook me a meal, I'm not going to say no.

I'll most likely roast some broccoli.

toasted onion bagel topped with cream cheese spread with 'garden vegs,' and sliced fresh campari tomato. (pretty good)

FINALLY having coffee, iced, with cream and sugar.

consisting of fried taquitos stuffed with beef and chicken, cheese quesadillas, beef nachos and chicken strips. Wife ate one beef enchilada, hard taco, fried beans and rice.

Adapted from a recipe I found in an Italian cookbook some time ago:

Place a layer of thinly sliced potatoes on the bottoms of a baking dish. On top of them add layers of onion (I used leeks since I had some), sliced peppers, whatever other vegetables are lying around. Then put some sausages on top, and pour diced tomatoes (or tomato sauce) on top of everything. I sprinkled the bake with a good handful of oregano, since I'm thinning the herb garden. Add a glug of red wine if there's some leftover. Top with grated cheese if you like, or not - I'm easy. Bake in a moderate oven until it smells done.
