A simple stew I make

Stew beef ($12 now!!!) And chopped-up celery. Cook it on low in crockpot for 8 hrs. Serve over (microwaved) rice after squeezing lemon juice over it.

It is a very simplified version of an Iranian stew. Keto friendly wo the rice.

get a chuck roast or london broil and cut it up into chunks yourself. sometimes 3 - 4/lb.

london broil/top round is very lean, add a little olive oil.

Version of an Iranian stew, khoresch(sp?).

It tastes good with the lemon juice. You can make regular rice and brown the bottom for more authenticity

I'm not eating beef these days, it's just too rich for my aging, delicate guts.

Beef and celery alone would be good, though I make it a full Irish stew with clean out the fridge veggies. I do braised celery in beef stock and it's a very nice vegetable if I haven't used all of it for salads and stir fries.

I also don't do keto. Renal diets are low protein, low fat and that leaves CARBS. Yum.
