What's for Dinner, Tues., May 2, 2023

The cannellinis and roast pork the RG made. I have fresh celery, which has such a vivid, deep taste compared to store-bought, which I chopped along with red onion and put on top.

Chopped off a little of the olive bread and also the prosciutto bread to go with it.

But my dish is white bean soup. Celery, onion, garlic, carrot, and a teeny bit of tarragon.

It’s cold, gray, and damp here today so I felt like having soup.

Better get busy on the corn bread….

2. A friend since 1957 called me last night

and wanted us to eat out Tuesday evening. They were wanting to go to Turkey Run Inn, but my wife said we just ate there a week or so ago. So instead we decided to meet up at Agave Azul Mexican Restaurant in Covington, Indiana for Taco Tuesday. So looks like soft tacos with sour cream.

We promised to go to Turkey Run in the near future.

so nothing for me. B. will be having leftover eggplant parm and tossed green salad. It was so good last night, I really want to eat.

onions, tomato paste, ground beef, bay leaves, apple cider vinegar, cumin, light brown sugar.

Cooking low and slow in 50/50 beef broth and water.

Doctored (frozen) 3-meat pizza (added extra cheese).

coffee cake for dessert.

We ate rather late because we had to make our pet food/household items shop after I got home from feeding Dad.

Dad had roasted lemon/garlic rubbed pork loin, rice pilaf, zucchini/yellow squash/mushroom sautee.
