Dear fellow cooking enthusiasts:
I've been a subscriber to Hello Fresh for almost 2 years and I have a lot of recipes to share. Hello Fresh is a company that ships meal kits to your home along with the instructions on how to make the meal. But if you have the recipe and if you purchase your own ingredients, you should be able to make this awesome recipe yourself. All the kits are for 2 (or 4) portions. Since I'm a single woman I often have enough leftovers for one or two meals.
This Mediterranean Couscous recipe is awesome and rather easy. I made it with the Salmon option, but it can also be made with chicken or plain vegetarian.

The hardest thing is finding the chickpeas, which lot of grocery stores don't carry. Maybe try Amazon or Whole Foods.
Let me know what you think!

What kind of stores do you patronize if you're having problems finding chickpeas? They're also sold as garbanzo beans, and are widely available both canned and dried. I've even occasionally found fresh ones (now those are rare). They're a staple of Mediterranean/Italian/Near Eastern/Indian cooking - not to mention being a component of that American classic, Three Bean Salad.

(3,321 posts)HelloFresh is a commercial company, but sharing these recipes for free is sort of undercutting them more than promoting them, it feels like. And I don't really have a problem undercutting HelloFresh, 'cause they're big ol' union busters. Let's pirate these recipes XD
