tried a new method for Red Velvet Cake

The eggs are separated, with the yolks mixed into the batter and the whites beaten into a meringue and folded in after everything is mixed in. This makes a very nice cake with a fine crumb. (this is the same method for German Chocolate and Italian Cream Cakes)

If I were making this for myself I would use Ermine Frosting instead of cream cheese. Ermine is the original frosting for Red Velvet Cake. It isn't very sweet and is light and creamy.

beat butter and add the cooled thick mixture in small batches, then whip until it is light and fluffy.

Excellent on Red Velvet cake and is perfect for coconut cake.
