What's for Dinner, Wed., May 10, 2023

I'm having mini-meals today. They are:

Salad 1: I made the most incredible salad using a jarred goat cheese the RG bought.
The salad is incredible because of the quality of this goat cheese, not necessarily my salad-making skills!
I used a very young zucchini, sliced it on the mandolin, and put the softened cheese with it.

Olive oil-lemon vinaigrette; black pepper and chopped oregano over it, as well as sliced scallion from the garden. Really fresh.

For a side, salami slices on wheat crackers with a little Dijon.

Salad 2: Pineapple and roasted poblano guacamole with halved, (various colors) cherry tomatoes. The tomatoes are interesting--there's even a black color! Green, yellow, and red are the others. Sliced scallion.

This is mixed with homegrown baby arugula. The usual olive oil-lemon vinaigrette.

Toasted scallion pancake as a side.

Mini-Meal 3: Poached sea bass, very small serving (4 oz). Capers and olive oil over the top.

Sliced cucumbers with dill on the side.

Blueberry basil kombucha.

Ginger cookies and Sweet 'n Spicy Good Earth tea for dessert.

1. heating up some leftover beef stew tonight

I'm not sure what else I'll make, maybe just the stew. I'm having unexpected dental issues and have to avoid hard/crunchy foods for at least the next week. On the other hand, that means I can eat more noodles and dumplings!

I simmered the rest of the deli chicken and cooked some winter blend vegs, and frozen pork dumplings, with spices, soy sauce, ginger, and rice vinegar.

Strawberry season is upon us, so I took some frozen from last year, making room in the freezer. I made a shake using almond milk, heavy cream, Monk Fruit, vanilla and strawberries. Low carb and yummy.

with all beef dogs and diced onion, shredded extra sharp cheddar on his, Frank's Red Hot on mine. Steamed corn cut from the cob.

the sauce is homemade

garden salad (romaine, grape tomatoes, sliced mushrooms, celery, onion, orange bell pepper) with choice of bottled dressing

Ice cream for dessert (coffee chocolate chip)

Dad had pan-fried strip steak w/ onions, peppers and mushrooms, fries, and asparagus

I cooked seriously 5 days in a row. Went super simple today.
Did get lucky with a seriously tasty store-bought beefsteak tomato!
