Mollie Katzen recipe: Pureé of Watercress, Mushroom, Leek and Potato Soup. I've made this many times. It's one of my favorite soup recipes.
Making cornbread muffins to go with it.
It's still kinda cool here so this will be good for tonight. It won't even bother me to heat up the kitchen. It's 61 degrees.
Dessert: my delicious Indian dessert with the Indian cheese in creamy milk/cream combo, topped with almonds. Decaf coffee.

(36,328 posts)I'm a bit under the weather today so I'm going to visit the freezer for some easy dumplings and saute a couple pak choi for greenery.

(26,607 posts)I also made mashed potatoes, gravy and peas. I will repeat that meal tomorrow and the next day. I've frozen about half of the baked chicken breast. When I get around to thawing it, I'll be having chicken quesadillas and chicken salad sandwiches. I'll be getting at least six meals out of a breast that cost me maybe $3.00. Not sure how much, as it was in a package of 3, and I can't recall exactly what the total price was. Heck, even if the price for the three was $12.00, this is a bargain. The other two are labelled and frozen, and will eventually be thawed and cooked.
I happen to have a small appetite, live alone, and freeze various leftovers. A few days ago I made a chicken curry and froze three portions, again an economical sort of thing.
For me, my food costs are lower than ever. I eat out about twice a month. The rest of the time I cook and it's not hard to minimize my food costs. Having been married with kids in the past, I know that the math is very different for a family.
