1. The First Mate approves of your timing!

Nearly every morning as we’re having coffee, she begins plotting our possibilities! During the day, our plan will evolve as we discuss it.

We have a small sirloin that has to be cooked today and our current thought is lo mein, stuffed peppers or tacos. I’ll let you know our decision later!

Hope your meeting is productive!

2. Either meatloaf or goulash.

I'm leaning towards goulash since it stretches meat further than meatloaf, and if I wanna make it with a bit less meat than usual it doesn't bring the whole dish out of whack. Regardless of what I choose, probably gonna have mashed potatoes with it.

4. Update.

Decided on goulash, and I was hungry so I made it right away. Just having white bread with it. The noodles wanted to burn to the bottom and some did, but the smoky flavor is a good addition.

Now I wish that we would have brought more back, as we'd be paying twice as much for those items purchasing them here.

Oh well, the pizza will be good!

We encountered a rain squall as we sailed past Cape Canaveral and The First Mate stayed below to prepare the dinner.

Our range is gimbaled which means if the boat is healing (tipping to the side) the stove is hinged so it’s flat to gravity and the pots won’t slide. She got everything prepped and all I have to do is cook… and clean.

She halved a red and a green pepper and stuffed them with minced sirloin, rice, chopped onions and a bunch of spices. They went into our largest pan. I’ll cook them at 375 for about a half hour then put the cheese on top to melt. I made a small green salad and we have canned pineapple for dessert.

NJCher, I hope your meeting went to your satisfaction!
