Got some lovely brown and light green eggs from a friend and had forgotten how different and better farm eggs are than the grocery store ones. I mean, I knew they were, but didnt remember the exact taste until biting into the sandwich. Yum. I miss having chickens.
That was a snack. Dinner is going to be grilled salmon, with rice and spinach with onions and mushrooms. Trying to decide what to put on the salmon. Not going to cook till about 9:00.
Edit: Im too lazy to mess with the grill (its my day off) so defaulted to my usual baked salmon with a little kens honey mustard dressing on top. But, added some sriracha and a sprinkling of brown sugar, and put the onions and mushrooms in the pan, too. Garlic in the sautéed spinach. As usual. Gawd, Im boring, lol!
It was delicious and is now my new and improved default day-off salmon. The onions and mushrooms we perfectly cooked in the salmon juices and bit of dressing in the pan. The brown sugar added just the right amount of sweetness.

(22,767 posts)with broccoli, carrots, peas, red pepper over rice noodles. I want to make a sauce, similar to General Tso's, but B. just wants soy sauce, so working out in my head how I can make the sauce on the side just for myself.

(10,645 posts)on my way home from the doctor's - they had morels for the cheapest I've seen in years so I got a handful. I'll saute those in some butter, and have it with some ravioli, steamed artichokes, and strawberry shortcake for dessert.
