Soaghetti squash "pasta": with tomato sauce and pork sausages from WF. Lotsa' parmesan on top and Italian herbs from the garden.
I'm testing out low carb recipes for my diabetic brother, who is telling me he's not eating because he's too busy. He is way too skinny as it is, so I need to get him some ideas. I've been researching all kinds of sites and books for cooking for diabetics and have found some good material. For me, this is fun stuff. I just love coming up with menus and putting all my cookbooks to work, especially for someone I love.
Also a shrimp salad with avocado and black seeded Simpson lettuce/homegrown romaine. Stir fried asparagus in this and it goes into a low-carb wrap.
Dessert: strawberries and Greek honey yogurt. I have a new kind of chicory coffee I'm trying out, too. Just arrived from Amazon. You can't get it in the stores.

Spinach and Romaine leaves. Thin red onion rings and cherry tomato halves. Sliced hard boiled egg. Crumbled bacon. Shaved carrots. Pine nuts and garlic croutons. Topped with boiled shrimp and a creamy Parmesan dressing. Chilled Chablis.

Nor feeling hungry rn, may eat later.

(10,617 posts)with a very good emmenthal cheese, caramelized onions, a little pancetta, and the rest of the mushrooms from yesterday. Which means breakfast or lunch tomorrow will be leftover quiche.
