What's for Dinner, Mon., June 19, 2023

I'm making low-carb white sauce using almond flour instead of wheat flour. This will be the first time I've tried this. It is for butternut squash ravioli, which I'm serving with chicken sausages from Whole Foods. Herb will be sage from the garden.

The recipe research I've done on it says it can be done.

Pear-gorgonzola tossed green salad.

Blueberry basil kombucha.

Dessert: cup of cold decaf with a toasted waffle topped with nice cream (has banana and mango in it).

fried zucchini. Orange 🍊 before bedtime.

How big do those Cherie squash get? The one we ate didn't seem to be getting any bigger and was pretty small. We been watering it every day, but it is really dry here.

it is our 30th anniversary
(Still can't believe she put up with me this long)
anyway went to our fav fish place
she had parm crusted rock fish
I had yellowfin tuna steaks
baked potato salad
and added 4 jumbo shrimp ..
they were 3 bite shrimp ...
very good ... cheese cake for dessert ...

It's ground beef, onions, black beans, diced tomatoes, cilantro, chili powder and cumin cooked on top of the stove and then moved into the oven to accommodate a cornbread topping.

(Recipe also called for shredded cheddar, but I don't have any)


dessert is fruit salad leftover from Dad's b-day (92!) on Saturday.





Speaking of Dad, he had butter chicken (curry) w/ cauliflower and peas added... over jasmine rice. And birthday cake for dessert)

I like the coconut flour for sauce and biscuits. It is fun to try the low carb recipes and see what you like. My daughter made a bean based brownie at Christmas for a gluten-free family member. I liked them, and I hope she makes them again. We can eat tasty and healthy!

For my dinner today, I took the steak that was left-over and put together a tasty steak and cheese burrito. Lots of sauteed onion and pepper.
