What's for Dinner, Wed., June 21, 2023

Hamburger on low carb roll; lettuce, Monterey Jack cheese.

I made fresh coleslaw with Napa cabbage. Added shredded carrots. Also grated some purple cabbage for a colorful topping. Creamy dressing with fennel seeds and toasted sliced almonds.

Dessert: Chamomille tea, coconut fruit bar, 1 salted caramel cookie.

I will ponder the possibilities since the dining hour is nigh and will eat what ever I fancy. Unfortunately there is not much in the way of leftovers.

Salad, fruit and cheeses seem to offer the likeliest items. Cottage cheese and yogurt are also in abundance as well as a hard boiled egg.

Oh my, I discovered there is a small chunk of pot roast! The possibilities widen.

Dad had chipotle/garlic shrimp, Caribbean rice, peas and cauliflower

those squash should grow to the size of a spaghetti squash. About 8" long and 5" wide.

Sounds like you had yours a little early. There will be more! They are quite prolific.

so something super easy: Red Baron pepperoni pizza with added cup n' crisp pepperonis, tossed green side salad with homemade balsamic vinaigrette.
