Green Goddess Salad Dressing Recipe (video)

The time for fresh herbs is here! This salad dressing is just packed full of fresh herbs, and has an excellent fresh green aroma along with a slight sourness from the lemon and yogurt, and a bit of unctuousness from the little dab of anchovy paste (which is optional!). The small amount of olive oil really helps the dressing to emulsify, and makes it a little thicker, especially if you're using a slightly thinner yogurt like we are.

Of course you can add or remove herbs to your heart's content for this one. Make the flavour profile something you'll enjoy, or something that will go with what you're cooking. Also, this dressing is more traditionally made with Greek yogurt, which is strained to remove some of the whey, and makes it thicker. If you find that it's too thick to pour properly, you may wish to thin it out with a little bit of milk or cream. Also, sour cream or mayonnaise could be used in place of the yogurt, but they will add a different flavour profile to the whole thing.
