What's for Dinner, Mon., July 3, 2023

Gorgonzola-walnut ravioli with white sauce. I'm using almond flour for the sauce.

Tossed green salad with beets and feta cheese. Toasted pecans over the top.

Mixed berry kombucha.

Dessert: Watermelon.

They were supposed to be a starter but were rather filling, so they are the main course.

Tortilla chips topped with:

Ground beef with taco seasonings (a leftover)
Salsa
Shredded sharp cheddar (it's what was available)
Jalapeno slices

Once this was heated up I added:
More salsa
Chopped fresh tomatoes
Lettuce
Sour cream.

TJ is sleeping off her night shift so I ate it all

We used to call it (not PC) "squaw corn"-- corn cooked with bacon, onions, green peppers, and tomatoes. Recipe taught to me by a college bboyfriend who was from Albuquerque. Best made with fresh corn cut from the cob but can be made with frozen, which was how we made it then.

Air fryer pork chops, dredged in mayo and seasoned panko bread crumb mixture.

Key lime pie for dessert.
