What's for Dinner, Fri., July 7, 2023

Hamburger on a low-carb bun with lettuce, raw onion, ketchup.

I cook up hamburger patties four at a time in my small slow cooker and are they ever tender. Then I store them in the frig for a fast, easy meal.

It's so hot here no one wants to cook. The humidity is high, too.

Cold cucumber salad with red onion, dill, and sour cream/marcarpone dressing.

Cherry kombucha.

Blueberries and tapioca pudding for dessert.

Along with buttered pasta, lime fizzy water.

edited, Forgot to post the marinade.

I cut it in half b/c the tuna steak was only 5 ounces.

Marinade:

1/4 cup soy sauce (use gluten-free soy sauce for gluten-free version)
2 tablespoons seasoned rice vinegar
2 teaspoons brown sugar
2 tablespoons extra virgin olive oil
1 teaspoon dark sesame oil
3 cloves garlic, minced (about 1 tablespoon)
1 tablespoon grated ginger

I will definitely use this again

She was sweet enough to leave us two strip steaks and a lemon cake for dessert. I brought a large potato that I will bake and split between the two of us. When my husband gets off work all he’ll need to do is grill the steaks on the gas grill! We only have a charcoal grill at our house so we rarely grill on work nights. Yes, I can grill but it brings him so much joy to do it 🥰 So a rare treat for us and it feels like a mini vacation, although we’re just across town!

I seasoned the salmon with butter and lemon pepper. I used spaghetti sauce, and added Italian blend mixed veggies.

(yeah, I actually did turn the oven on)

salad on the side (romaine, tomato, celery, onion, carrot and yellow bell pepper)



dessert is pineapple upside-down cake (yeah, I baked that too, but I did it yesterday)

With the heat here in Fla. a week of Fridays with a Tuesday holiday, and LilBit on a new med regime since Monday,, I’m just beat , so,,,,,,,
I got LilBit moving and we made a quick trip thru our lil town,
Dollar General for snacks and soda, Hardee’s for our lunch, and a stop at Subway for sandwiches for dinner.
I know, Lol.

I’ll do better tomorrow.

I usually add some Chinese red-cook seasonings to roast beef, like a bit of light and dark soy sauce, some Shaoxing wine, coriander seeds, fennel seeds, bay leaves, cinnamon, star anise, and black cardamomm, mostly to flavor the gravy.

I had people over for dinner, but it was too hot to cook. I made a Greek salad ahead of time—orzo, garbanzo beans, tomato, and parsley in a lemon dressing. We added store-bought rotisserie chicken, pita bread, and tzatziki.
