What's for Dinner, Sat., July 8, 2023

Posting a little early because we've had several thunderstorms, so in case I get knocked off the internet, at least I'll have this done. (thunder rumbling from the east now)

I'm cleaning out both refrigerators and making a fun thing out of it. I find little bits of this and that and dream up some sort of mini-meal with it. I've made a caprese salad with mozzarella and basil and broccoli and garlic in peanut sauce with pasta.

Some sort of stir fry vegetables coming up next.

Might post back with other creative ventures.

takeout tom ka kai soup, which I am going to incorporate into a casserole over some carrots, potatoes, onions, and green beans. I've done that a couple of times in the past and it's surprisingly good! Also a salad of lettuces, radish, summer squash, tomato and slices of the last 3 strawberries and a mandarin orange.

I bought some nice beets at the farmer's market and will sauté the beet greens for supper too!

With avacado and onion rings.

I am dry marinating a beef brisket for the smoker tomorrow. Homemade mac & cheese with a tossed salad.

I'm cleaning out my fridge, too!

I made a savory pie with a bread crumb crust. I have dishes to do, but plenty to eat till Monday

paneer cooked in a jar of tikka masala sauce, with added onions and peas, rice, roasted cauliflour with garam masala, and the last bag of makhani dal that I made and froze some months ago.

ETA: with an assortment of pick.les and chutneys from the corner store
