What's for Dinner, Fri., July 14, 2023

Big, monster, huge salad. I went to the Korean greengrocer and got fresh items, plus what I have from the garden. Besides all the vegetables like cucumber, peppers, etc., I harvested some cranberry beans that I will cook in butter and add to the salad. Chopped celery from the garden, too. Since the basil is coming in now, I'll slice some of that to go in as well.

Cold chicken breast, avocado, and turkey bacon on top.

I have romaine, black seeded simpson, green, and red tip lettuce for the greens.

Pineapple peach kombucha.

A beautiful fresh rack of ribs from a local farmer are marinating in a spicy barbecue sauce. I'm going to slow cook them on the grill.

Corn on the cob buttered, salted and peppered and wrapped in foil to be cooked on the grill.

Homemade cole slaw on the side.

Butter pecan ice cream left over from last night.

sauced butter, a bit of tomato paste and homemade sweet dandelion jelly gifted by neighbor with a no-salt Penzey seasoning (Arizona Dreaming (heat) or Sunny Spain (citrus) mix on mixed garden-fresh orange and green pepper and cherry tomatos; quinoa side

Iced green tea with raspberry/hibiscus with frozen Tropical Fruit garnish

Rotini pasta with sugar snap peas, green onions, queso fresco, flat parsley and mint. I got the recipe from WaPo the other day and it sounded good for hot weather.

dinner is leftovers from Wednesday, artichoke pie and sautéed radishes with greens. The pie simple to make and very tasty. And yes I cheated, bought the pie crust!

I'm not sure the motivation is present.

We have a big salmon fillet to bake with herbs and butter.
Some tiny gold potatoes
Several varieties of "steamer" frozen veggies to choose from

The only size of mozerella I can find around here is a 1 pound chunk, which is enough for 2 pizzas. Same with pepperoni - the sticks the local market carries are enough for two. So we do 2 pizzas in a 7-10 day period.
