Baked today

Last weekend for Christmas in July in the vintage mall where I have a booth. The manager assigned each vendor a weekend to make cookies, or bring water.

I decided to make cake mix cookies, haven't done that for years. I used a mix of butter and coconut oil, which made a softer dough. I added some colored sprinkles, let it chill and made balls to bake. I made a XXX sugar glaze, with the idea of putting sprinjles on the top, but they didn't stick. They are fine without.

Then, I made almond flour pumpkin bread, sweetened with Monk's Fruit. I made a thin, fluffy cream cheese frosting. The bread and the frosting came out wonderful. I'm going to share the loaf with my daughter's family. It is low-carb.

Your goodies will undeoubtedly sell out.

I used to do a maple walnut bread with maple frosting. It never lasted long at a pot luck.

I think I would have posted it under Topics>Recreation! lol

We're actually offering complimentary refreshments for the Christmas in July event.
I made the cookies for that and made the pumpkin bread for me. I took half the loaf over to share with the family.

I have some maple sugar, and I used a little in the pumpkin bread. The recipe I used called for maple syrup, but I didn't have any. I love maple

Usually I chop the pecans with a knife cuz I like them chunkier than my hand grinder makes them but today I was in a hurry & ground them in the grinder. They all floated to the top & made a sort of crunchy crust. The pie tastes good, but the top is crunchy/crispy with pecans. Next time I'll take the time to hand chop them.

It sounds really yummy. I've made a nut pie with walnuts, and once made a chocolate pie, like pecan, with walnuts. Man, so good
