What's for Dinner, Tues., Aug. 15, 2023

Appetizer is Rainforest fig-almond crisps with "toasted everything" spreadable cheese.

Salad: watermelon, plum, arugula salad with goat cheese.

Yellow "buttter cube" zucchini with onion and mint.

Pomegranate kombucha.

Dessert: red grapes, Earl Grey tea.

I made a fresh batch of oil last week. The noodle recipe is from the NYT.

what kind of oil did you use?
Did you grow the chilis?
I would love this meal. My kinda' dinner.

I use plain dried chili flakes, I think they're from Vietnam, plus crushed Sichuan peppercorns, lots of crispy fried sliced shallots and some garlic, some dried orange peel, a few cloves, a piece of cinnamon, bay leaf, a couple star anise, some sesame seeds. I think that's about it. It's not really a recipe, lol.

I fry the shallots slowly until golden and crisp, pour the hot oil onto the dry ingredients and mix, then add the shallots back in to keep them from burning. It keeps in the refrigerator, but shake before using, otherwise the crushed peppercorns all float on top.

I love it with noodles and dumplings. Or just about anything.

...only made with Campbell's condensed tomato soup, lol. Ms K and I both have fond memories of eating tomato soup and grilled cheese sandwiches as kids. Probably because our mothers didn't feel like cooking.

initially pressure-cooked in the Instantpot, then finished on the grill. Along with corn and grilled plantains which may not have been a successful experiment
