Open-faced vegetable and cheese sandwiches. Mollie Katzen always has good ideas for this type of sandwich, so I have some inspiration from her Moosewood Restaurant Cooking for Health cookbook. Tonight I'm going to make up shredded zucchini and carrots. This has garlic and onions with gruyere over rye bread.
I might try broccoli and red peppers if I want another one later. This has garlic, red pepper flakes, rosemary/basil and melted mild provolone.
Sweet potato fries done in the air fryer.
BTW, I have a tip on sweet potato fries. Trader Joe's is the best place to get them and they are inexpensive there, too. Aldi is a flunk out on consistency with them (sometimes they have them, most of the time they don't) and ShopRite's price is way too high. TJ's is $2.99 and they are really good fries, too.
Tart cherry kombucha.
Chocolate-cherry (dark chocolate) and dark Chinese tea for dessert.

(22,886 posts)Regular spaghetti with a spicy marinara sauce topped with freshly grated Parmesan cheese accented with fresh basil leaves. Garlic bread on the side.
The salad starts with Boston Bibb lettuce. Thin slices of red onion and cherry tomato halves on top of the lettuce. Itll be drizzled with a honey & balsamic dressing.
90% cocoa chocolate, orange slices and red wine for dessert.

The recipe calls for apple brandy, and I used to have some, but it was gone, so I used slivovitz, an Eastern European plum brandy.

(10,646 posts)Early October is the hottest time of the year in these parts, and I didn't feel like cooking. So we ordered some food from one of our favorite places. Because their portions tend to be large, we just ordered a few appetizers. We finished our third meal from them tonight, and still have leftovers. (It's all good, though)
