What's for Dinner, Fri., Oct. 13, 2023

Turkey meatloaf sandwich on whole wheat skinny bread with mayo, raw onion, lettuce. Accompanied by sweet potato fries.

Later tonight, Brussels sprouts that are roasted in a cast iron skillet with pancetta and garlic. Syrupy balsamic poured over after taking out of oven.

Dessert: I came up with this easy low-sugar dessert. Two-thirds of a cup of no sugar ice cream (Turkey Hill makes it). Then take a vanilla ice cream sandwich and cut it into squares (or tear it) and put over the top. Let it melt somewhat.

So good! The ice cream sandwiches only have 140 calories and the ice cream is 110, so 250 calories total. I find that half of this is a good serving, and put the other half back in the freezer for another time. It's low enough in calories/sugar, though, that you could have the whole serving.

Also: a note to my comments last week about Shoprite's high prices on sweet potato fries. I see they have introduced a Bowl 'n Barrel version and it's quite reasonably priced. $3.29. Trader Joe's is $2.79 or $2.29 (can't quite remember) for a slightly smaller bag.

Chicken salad with greens on multigrain bread, baked (local) acorn squash with a bit of maple syrup, a wedge of Vermont cheddar cheese, lemon water.

I have tried several times over the years and could never get the peas to soften up. If this does not work I will have to buy can of Campbell's and add bits of ham and carrots.

5. when i bought cheap store yellow sp they got soft. just gotta cook them a long time, then i mash em.

It turned out just fine just a quick buzz with the immersion blender and it is great. And plenty of leftovers.

Frozen would take much less time and would have more flavor.

That would take a Costco size bag of fresh frozen peas.

6. late BLT'S. but i make bacon, lettuce + toast. should be BLTMWs. cause i use a lot of miracle whip.

Ms K apparently wants chicken, lol. She asked me whether I'd thought about dinner yet about 15 minutes after I got up from bed this morning. I said "No, but we have some pork chops in the freezer." About an hour later I found two fat chicken breasts thawing on the kitchen counter. OK, chicken it is!

homemade garlic bread and a salad with lots of fresh veggies. I think I'll make a Caesar dressing for the salad.

I got my Covid shot today. When I got home, I had some jalapeno chicken, a burrito shell, and a spicy avocado. I like to roll the burrito shell up and eat it like bread, not filled. I cut avocado in 1/2, and season it with s&p, cayenne and a little Badia Complete seasoning. Nice filling meal

our turn to cook for the gaming group, so we made a Chez Retrograde stand-by: bell peppers stewed with Italian sausages, tomatoes, onions, and garlic, served with fresh (well, it was fresh at the local market this morning) sourdough.
