What's for Dinner, Sat., Oct. 21, 2023

Tossed green salad with cranberries, feta cheese, and toasted walnuts. Made my own olive oil/lemon/garlic vinaigrette.

A couple cold chicken brochettes with green pepper and onion. Peanut sauce.

I might peel and chunk the sweet potatoes and throw in some apple pieces, too.

I bought some purple sweet potatoes from the farmer's market and they are delicious. This is a different way to make them. Will be putting in the oven shortly. Also made some dumplings and will sauté them soon.

Purple sweet potato fritters (ready to pop in the oven)

Veggie dumplings. Will start to sauté shortly. Remainder will be put in the freezer for later use.

mashed potatoes and gravy, steamed broccoli.

The beekeeper I buy honey from at the farmers market had jars of horseradish today. His wife said they'd just ground it yesterday. I put about a teaspoon in the mashed potatoes, and I'd have liked more, but my husband said that was enough. So I get to figure out uses for this horseradish ....

leftover chicken and one of the last eggplants from the garden. May have gone a bit overboard with the black bean paste, but it was OK
