What's for Dinner, Sun., Oct. 22, 2023

I was thinking about Sunday meals at Grandma's. She used to make roast chicken with mashed potatoes or meatloaf with mashed potatoes.

So I made pureed cauliflower with white cheddar (to do a low-carb imitation) and I already had turkey meatloaf ready to be sliced.

It was nice: reminded me of happy times when I was a kid.

One thing Grandma did that I don't though, is put sugar on tomatoes! I had some sliced tomatoes but left off the sugar.

As the day ended, we would watch television and I remember one show was "Mr Ed," the talking horse. Grandpa thought that was the funniest show.

Portobello mushroom caps stuffed with roasted tomatoes, Panko, garlic, onion and cheeses, baked locally-grown acorn squash with Vermont maple syrup and a platter of roasted vegetables: cauliflower, broccoli, tomatoes. Also lemon water. Delicious.

I also baked a honeynut squash that I'd gotten at the farmers market. Tastier than butternut IMO.

Mr. Ed was a favorite of mine, too!

Pulled pork sliders, coleslaw, and sweet potatoes roasted with apples and walnuts. Ms K requested it again tonight!

A simple rice pudding dish with some raisins mixed in, the “duck?” My name is Doug, my Grandmother was so German, it came out “ Duck” not Koz,

. Because all she knew was , I was the only one who, ate, loved that recipe. Grandma knew!
I remember the basics, and made it for LilBit, and she eats it up.
