Ohio Joe's Hot Sauce #1

I decided to give making my own hot sauce a try. This is not my best hot sauce but simply my first go at it.

Ingredients:

1 medium size yellow onion, quartered (or chopped to whatever size will fit in your food processer)
16 ozs of white viegar
4 jalapeño peppers
2 habanero peppers
1/2 tsp salt
1/2 tsp pepper
Juice from 1 lemon
5 cloves of garlic
1 14.5 oz can of diced tomatoes

Toss all liquids and the salt N pepper into your food processer and give it a pulse to mix. Feed the rest of the ingredients into the top of your food processer so they get nice and liquified. Keep mixing until everything is very well blended and it all appears liquid. Get it in a jar that will hold it and put on your favorite foods.

I like the taste of this... A real nice bite but not too flaming. It tastes a bit lemony at first then the heat kicks in a few seconds later. My only problem with it is that it is a bit too thin, I'd prefer a thicker sauce but that is something I'll dig into the next time I make it.

And if you roast the peppers first they will impart the heat more evenly instead of sneaking up on you.

Also cilantro, but don't overdo it.
