Elevated store bought stuffed pork chops (I love fall cooking in northern NYS!)

I bought a cranberry/stuffing pork chop at the grocery store. I seared it on both sides in Dutch oven. Then I added some of my homemade applesauce, a friend's apple raisin chutney, the filling from another friend's bourbon pecan pie, and two small honey nut squash. Baked all. Holy cow. Pork chop was browned and the squash, applesauce, chutney, and pecan pie filling made a nice sort of slurry/broth. Delicious!

Today was 45 degrees and rainy and I was waiting for the plumber. So, I looked around at stuff that needed to be used up:

potatoes, beef broth, heavy whipping cream, cheddar cheese, kielbasa, half an onion.

So, I made scalloped taters with carmelized onions and kielbasa. Yum. Since the oven was on, I threw in a regular acorn squash and a carnival acorn. I poured butternut squash seed oil in them, then halfway through baking added S&P, curry powder, paprika, garlic powder, sumac, and aleppo pepper to two of them. Butter, brown sugar, and nutmeg to the other two.

Everything was delish! When the plumber finally arrived and entered the kitchen, he was drooling from the aroma of the carmelized onions.
