What's for Dinner, Tues., Nov. 28, 2023

I slow-cooked a young hen from WF a few days ago and said I'd do something different with it than chicken soup.

However, it is so freaking cold here (and with a nasty wind chill, too) that chicken soup is the perfect solution for tonight. Consequently, I searched under "unusual chicken soup recipes" and while I didn't find recipes, I found a page of ideas. I'm going to make smaller batches, since I have so much broth, and try 3-4 of the different ideas.

The first one I'm trying tonight will be Sopa de Fideo. It will have noodles, but also cilantro and avocado. Onion, garlic, and Tex-Mex seasonings. I found the different ideas at Daily Meal.

Now for all you smart pants cultural recipe purist people out there, I am aware that Sopa de Fideo does not actually have chicken in it, but the suggestion says to go ahead and put it in anyway.

I think I'll also pop a batch of cornbread in the cast iron skillet in the oven, too.

Pink Lady kombucha.

Raspberries for dessert, over a toasted waffle and Greek yogurt.
Decaf coffee.

3. I'm almost through the barley soup

It got so thick, I don't think I should call it soup. It tastes good and reminds me of the soup my Mom made and ate. Since it is so thick, I heated some up, and then heated a burrito shell. I filled the shell with the barley and topped it with some french-fried onions for crunch, rolled it up and ate it. That was pretty good. Maybe I invented a new barley meal. lol

We have chicken breast cutlets and a basket full of lemons to use. The green beans, too.

My sis made me some turkey soup out of the Thanksgiving leftovers.
She also made some turkey salad, which I had on a toasted English muffin.

Dessert is banana cream pie.
