For anyone who has had a South Beach Ricotta Cream Cup, I found a new flavor!

I was looking for a good diabetic friendly snack before bed that may stabilize my blood sugars throughout the night. I remembered the ricotta cup recipe from the South Beach Diet book from years ago, but put my own twist on it.

1/4 c. part skim ricotta cheese
1 tbls natural smooth peanut butter (or 1 tbls peanut butter powder like PBFit)
1 tsp Huckleberry or Raspberry Balsamic Vinegar

Mix the ricotta and peanut butter together until smooth. You may need to add a drizzle of milk or cream for a smooth consistency if you use the powdered peanut butter. Drizzle with 1 tsp of Huckleberry Balsamic Vinegar. No additional sweetener needed.

This tastes like a PB & Black Raspberry jelly sandwich without the bread!

I must confess I'm probably going full fat ricotta because it's what I have on hand. What a great idea for a late night snack.
