What's for Dinner, Fri., Feb. 23, 2024

Stir fry: baby bok choy, yellow crookneck squash, and scallions topped with orange glazed tofu cubes and cashews and little red peppers.

Side dish is miso broth.

I love tofu when it's glazed. In this case, I gave it a nice brown in the skillet with a combo of peanut oil and sesame oil. Then I put it in the oven on a sheet pan and added cashews. Put the orange glaze over all. Baked it at 350 until it got "sticky." I get the glaze from Aldi; they have all kinds of flavors.

Last night the buffet at the Russian ballet dancer lecture was so good! They had all kinds of Polish sausages and sauerkraut.

The best part was the dessert, though. Meringue filled with whipped cream and topped with raspberries and blueberries, decorated with fresh mint. There were different flavors with the whipped cream filling, too. Mine was apricot.

The talk was so interesting, too. The professor is a Russian immigrant who went to Bolshoi regularly during her years growing up. She showed pictures of it and it must have been such an experience. She actually got very emotional during one of the ballet videos, so I know the ballet must mean a lot to her. I also got to see many of my former teacher colleagues, and that was fun, too.

for my upcoming cataract surgery. Wife asked to go to Arby's to pickup sandwiches for dinner. Roast beef sandwich for me, wife was hungry for an Arby's fish sandwich.

I will have my orange 🍊 and tangerines before bedtime.

I can now see distance without glasses. Colors are vibrant and I am thrilled 😄

I was only 54 years old. Doctor back then said I had one in my left but it wasn't ripe enough to remove. Like you I couldn't believe how much better my eyesight was after the surgery. I'm looking forward to this surgery.

for a small group. Roasted various peppers, onions, and potatoes, then added the sausages and chopped tomatoes and baked the whole for about 20 minutes. I think artichoke hearts and A. bisporus (a.k.a button mushrooms) would have been good as well, but one of the diners doesn't eat anything beginning with "a"
