I made another version of stuffed peppers, this time using riced cauliflower, ground beef & pork, onions, and parmesan in the stuffing. I topped them with provolone and put in a slice of cornbread to warm up.
I also roasted asparagus, some with orange sauce and others wrapped in ham and topped with muenster.
Mug of tea; no dessert.

(22,850 posts)Imagine a shallow bowl. Put some heated marinara sauce on the bottom. Put cooked rigatoni in the bowl. Cover the pasta with more sauce. Place some breaded and fried shrimp on the pasta. Cover the lot with thin slices of fresh mozzarella cheese. Bake in the oven at 350-degrees until the cheese starts to melt. Serve with freshly grated Parmesan cheese and a nice Chianti. We also had a simple green salad.
