Beef ravioli with oyster mushroom sauce, which has chopped parsley, green onions, parmesan, and heavy whipping cream.
I found this beautiful oyster mushroom at the Korean greengrocer. It is perfect. Beautiful!! Excited about turning this into a sauce.
I'll mix some baby arugula with red tip lettuce for a salad. No dressing (to make up for the heavy cream in my sauce).
Dessert: salted caramel creamy nougat bar and decaf coffee.

(5,117 posts)Its starting to grow on me, which is good because there are 4 or 5 more pieces in the freezer. Making it the same way as last night because it was the best one yet.
I had some slightly sweet pesto vinaigrette I made two weeks ago leftover in the fridge. Just salt and peppered the filet, slathered on the vinaigrette and chucked it in the air fryer. Flip after 10 min and drizzle more vinaigrette on top. Tasty!
With basmati rice and green beans.
Sweet tea.
Going to a big meeting where there are usually anniversary celebrations so fingers crossed for some cake!

(1,157 posts)garlic mashed potatoes, roasted root vegetables (rutabaga, carrot, turnip and potato) and wilted kale and onion. All drizzled with pan dripping.
I love the root vegetable combo. Wondering if you put the pork chop with the veggies and it was a sheet pan meal. Sounds so, so good.

(1,157 posts)The root vegetables were left over from my rotisserie chicken, root vegetables and kale curry last night. I didn't need it all for the curry. I had some kale that needed using so I tried a wilted variation of wilted lettuce. I cooked the thick pork like was suggested on the internet - oil and season, high heat for two minutes on each side in a cast iron skillet then put the skillet in the oven for 15 min.

(10,653 posts)chopped up parsnips, carrots, onions, turnips, and potatoes in a whole-wheat crust, with a mushroom sauce. I'm not happy with the way the crust turned out - even after hydrating for a few hours it was dry. It's in the oven now, we'll see how it comes out.
