I've done sandwiches, tacos, shepherd's pie, but still have close to 2 pounds left. I don't want to freeze the rest, since it's already been frozen once.
ETA: It's already cooked. I've learned from experience that while you can grind roast lamb it doesn't make good meatballs. Might make an interesting ragout: it has a whole-grain and cumin mustard rub.

(152,069 posts)I chop a bunch of things up, and stir fry them.
First Onions: Cook these (chopped) until done.
Next potatoes (partly cooked or leftover)
Then zuccini
And lastly the lamb, cut in medium pieces. I add any drippings from the roast if I have them.
It's a lot of chopping, but it's delicious.
