Happy Mother's Day treat, Chocolate Mug Cake
Easy to make with ingredients that most already have on hand. Dad (mom) and the kids can whip this up for mom when other plans may have fallen through or the constraints of daily living have gotten in the way of planning ahead.
Chocolate Mug Cake is a perfect treat for Mother's Day, birthdays, Valentine's or just because. This generous recipe makes enough to serve two if you want to share. Serving suggestions include fresh strawberries, ice cream, whipped topping or a caramel drizzle.

INGREDIENTS
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
2 tablespoons whisked egg
3 tablespoons milk
3 tablespoons oil
Pinch of salt
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug
DIRECTIONS
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (optional) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but dont be alarmed!
Allow to cool a little, and tip out onto a plate if desired. Garnish with desired topping or enjoy plain while still warm.
