What's for Dinner, Fri., May 17, 2024

Glad I have my matzoh ball soup because I just tore out poison ivy that filled a big construction bag. Took me nearly two hours. Headed to the town's recycling center now to get rid of it. They have a huge compost operation there. There are mountains of compost with steam rolling off of them because they are so hot.

Looking forward to the soup with the cornbread.

The latest kombucha, pineapple, turned out to be exceptionally good.

For dessert, the new dark Chinese tea that came in and also a square of sweet bread with toasted walnuts and no-sugar ice cream.

but we do have poison oak all over (beautiful fall foliage!). Many places use goats to keep it under control

We had planned on haddock. It's on sale--$7.99/lb for FRESH haddock. They were out. I got a rain check, but you can bet when I go back, they will only have frozen. Not happy about this. Thinking about writing the store headquarters.

Most of my ingredients come from my pantry, my freezer and my dry spice rack.

I saute a handful of chopped green peppers in olive oil. Then I add some white wine and a little butter. Then comes 5 cups of water, Italian seasoning blend, salt, pepper, garlic powder, paprika, celery seed, chopped sun dried tomatoes and a couple tablespoons of Knorr chicken powder. When that's all settled I add a half bag of cooked frozen shrimp and a pouch or two of pink salmon. I cook that and then blend in a half a cup of sharp cheddar cheese. If it's too thin I add in bread crumbs.

Ladle over cooked angel hair pasta or thin spaghetti.

I may have a cocktail. I bought a new coupe glass and it's so pretty.

Went to a new Vietnamese place nearby. Very good pho, but it only came in one size -too large- so we had the leftovers for dinner. With another peach shortcake for dessert
