Little Gems with Lemon Cream, Spring Onion, Radishes and Mint.
Salad recipe is from the Joshua McFadden cookbook I've been using. Instead of using heavy cream, though, I'm using burrata. The salad has toasted sunflower seeds over the top.
Cherry kombucha.

Usually I wait until an evening when rice is the starch, but yesterday I couldn't resist the LaChoy and used half of it to top off the remaining potatoes I had. I know that's unconventional, but it was delicious.
Tonight the starch is pasta and I think it will work out great with the remaining LaChoy.
The pasta (spaghetti broken into quarter-lengths) is being cooked in the Instant Pot - 1 pound spaghetti and 5 cups water and 4 minutes of high pressure cook timer.
I rotate starch between potatoes, rice, potatoes, pasta, potatoes, rice etc. Perhaps with beans thrown into the rotation occasionally.
I have a quota on salmon that I try to fill in the last 10 days of the month, so that's why the salmon. (Similarly I have a quota of a large can of tuna to consume in the first part of the month).
Also I have to get going on it soon because I'm 3 days behind on my flossing and brushing quotas -- an accumulated deficit that accumulated over about 3 months. My health condition makes regular hours impossible, so I just keep track of where I'm at and try to reduce the deficit, by e.g. targeting 8 hours in-between instead of the quota 12 hours in-between. And to do my brush/floss soon after a major meal.
I'm doing great on the meat quota (4.0 oz/day no more and no less on average), and veggie quota (2.5 cups/day minimum).
