What's for Dinner, Thurs., May 30, 2024

Meatloaf (beef) with tomato sauce glaze.

Roasted butternut squash with butter and maple syrup.

Kombucha: blueberry-basil.

Dessert: raspberry fruit bar and cashews.

Had to keep it simple tonight since it was another poison ivy removal day. Whew, only a few hours on another day and I'll be done.

Poison ivy is a very worthy opponent. Gotta' think of everything.

daughter texted me verdict's in, going to see her/them tomorrow, told her I'd send her Tucci recipe, https://www.democraticunderground.com/1157140623

It's absolutely delicious and super easy to make. Great for those evenings when you don't have much time to cook.

Here is the recipe in case you are interested: https://pinchofyum.com/black-pepper-stir-fried-udon

also, looks easy enough to add shredded chicken to it for some meat. I don't do mushrooms (allergic). What would you think about using Rice Noodles instead of Udon? Think you'd lose too much in translation? I've got 2 boxes of rice noodles ready to use. Been making Bilogi with then, since hubby prefers noodles to rice.

Rice noodles would be okay, you just wouldn't get that bit of "char" on the noodles. I'd say give it a try though.

Got a real nice grilled honey chicken beast, sliced for sandwiches. A maple cured bacon.
Our supermarket had heirloom tomatoes pretty cheap. I bought one not much smaller than a grapefruit!
Some iceberg lettuce on thick cut toast.
Fast, easy & delicious.
