I harvested oakleaf lettuce and made a salad I have been making for years. It's my own idea. Here's what it has in it:
salad greens
green pepper, chopped
red onion, sliced with mandolin
chickpeas
grated, high-quality cheddar
French dressing
Here's a pic of oakleaf, but I've also made this salad with any other kind of lettuce, including iceberg. The oakleaf is on the right.
The pic is not so great. I'll try for another one sometime soon. This is my favorite lettuce but it is rarely sold commercially so you have to grow it if you want a reliable supply.
In addition, I'm having one of my slow cooker chicken thighs in peanut sauce that I made two nights ago.
Blueberry basil kombucha.
Green grapes for dessert, along with dark Chinese tea.

(4,231 posts)Was so busy, time got away from me. It got too late to start in on a creamy chicken and wild rice casserole I'd planned, so I popped in a frozen pizza for my supper.
Blech! I don't know if anyone saw the Supernatural episode that took place in "Plucky Pennywhistles" pizza and kids party joint. But at one point, Dean spits out the pizza and says, "It does taste like a$$." THAT'S exactly how I felt about my frozen pizza tonight.
I think later on, I'm going to have a small bowl of strawberries with whipped cream on top. I'll reward myself for the yukky frozen pizza. Tomorrow, chicken and wild rice!!

(Totally flubbed the meatloaf. I had sweat some onions in some olive oil with some garlic and rosemary and set it aside to cool before adding it to the ground beef mixture.... and then I forgot to add it. Noticed it when the meatloaf had been in the oven for 20 minutes. "Corrected (?)" by adding that stuff to the gravy.)
